CREAMY RISOTTO

On the 12th day of olive oil, we made a creamy, Milan-style risotto and finished it with our single-varietal Alter Ego Itrana by @oliomarsicani, which is a perfect pairing because while the Itrana has loads of flavor, its bitterness and pungency profiles don’t overwhelm the risotto. Don’t worry if you don’t have saffron threads; the risotto is also excellent without it. There are many excellent olive oil cakes out there, but the one that surprised me the most, and was easily the best, is this vegan version from @mydarlingvegan. We slightly adapted it by adding freeze-dried berries to the batter to give a delightful pop of flavor and use our @oliomarsicani Alter Ego single-varietal Itrana. You could also use our @orodirufolo EVOO cooking oil. CROSTINI WITH OLIVE OIL/HONEY RICOTTA

This is one of our favorite non-recipe recipes. We pair our Marsican Alter Ego single-varietal Itrana with the ricotta and honey for a simple and stunning appetizer. 1. Take excellent ricotta and drizzle raw honey and excellent extra virgin olive oil on top. 2. Mix well. 3. Top sliced, toasted baguettes with a spoonful of the ricotta, drizzle more EVOO and sprinkle with flaky sea salt.
