A Twist on Olive Oil Cake (V)
During the holidays I was able to take some time to bake a cake. I had some fresh new pistachios from my friends in Bronte, Italy, along with their pura pistachio paste. I found a recipe from Pure Vegan cookbook by Joseph Shuldiner, and then made some adjustments to get the perfect cake that was loved by all. It is simple and packs a punch in both flavor and presentation. I used our Bio Blend from Torre Bianca to make it extra special. Even if not at the holidays, it still looks and tastes so special. I have been looking at so many lovely recipes and uses for fresh olive oils. We have talked about even using olive oil on ice cream. So, I gave it a try to see what it really was about.
