This organic Extra Virgin Olive Oil (EVOO) is from the Tonda Iblea olive variety, grown between 500-600 meters in altitude in the Buccheri area, on the island of Sicily. The Tonda Iblea are harvested in the first week of October, when the olives are still green. They are milled within 2 hours of harvesting and are cold pressed in two phases in a continuous cycle mill. Storage is in steel containers, saturated with nitrogen and put in a controlled temperature room in order to maintain the chemical, organoleptic and sensory characteristics of the oil.
It is a Green slightly veiled oil, with intense scent of fuity fresh olives with a pleasant fragrance of tomatoes, green grass and artichoke. The tast is a perfect balance between bitter and spicy notes with hints of tomato, artichoke, green grass – very pleasant and persistent.
Best uses: On raw dishes in general, salads, vegetables, soup and meats
