Peranzana Cooking EVOO from Sacco Oliveti

Pugli, or as it is also known as Apulia, has a long history of olive growing and olive oil production. There are many varieties of olives throughout Puglia, with many different flavor profiles. This particular cultivar, Peranzana – which was likely of Provençal origin, from which the Peranzana name is derived – is located in the north of the region. 

 

This oil has a medium herbaceous fruity flavor. It is harmonious, with balanced notes of bitter and spicy. It has an aftertaste of grass, artichoke, unripe tomato and / or light hints of fresh almond. The attributes of light spicy and bitter, thanks to their balance, manage to preserve the distinctive aromas, making it harmonious just after the pressing of the olives.

 

Different from our “finishing” EVOOs, this organic extra virgin olive oil is best for cooking. The highest cooking point on the oil is 400 degrees.
