This evo oil comes solely from the moriaiolo cultivar. The olive grove area called chiusa dei frati has always produced the best extra virgin olive oil, thanks to its well-drained soil, optimal exposure to sunlight and very heathy trees. It is their flagship product, with a strong personality, and it deservedly claims a starring role.
Bright green shades. Sweet sensations of pine nut and chive to the nose. Bitter sensations to the mouth, but never pervasive and well balanced. To be enjoyed on a pea puree with croutons and to prepare a “torta della nonna” custard cake.

Medium fruity, herbaceous, with hints of artchoke, mandorla and light tomato. Moderately intense notes of spiciness and bitterness; herbaceous of grass, artchoke and almond. Colour: green with yellow highlights. Medium fluidity.
