“Caieta” is made exclusively with olives from the Itrana cultivar, harvested when the drupes are still completely green. The predominant notes are fresh mown grass and green tomato. A smooth yet complex oil with flavors of tomato and almond.
Known for its green color, medium fruitiness: herbaceous type, aromas: hints of tomato, artichoke, and aromatic herbs. On the palate are medium notes of spicy and bitter; aftertaste of tomato and almond.
Best uses: on salads, raw vegetables as well as fish dishes and grilled chicken. Use for Panzanella, tomato salad and toasts and bread dipping.
