Casa del Tempo Ritrovato
Located on the banks Lake Garda in northern Italy, Casa del Tempo Ritrovato is the very definition of a small family farm. There, Maria Paola Gabusi and her two children grow a mere 2.5 acres of olive trees in an absolutely stunning setting.
From here, Casa del Tempo Ritrovato produces an excellent monocultivar EVOO from the Casaliva varietal. The Casaliva olive is the main cultivar used in the production of Lake Garda extra-virgin olive oil. The production area stretches between the hills and flatlands surrounding Lake Garda, in the provinces of Brescia, Verona, Mantua and Trent. This is the northernmost point where the olive can grow, at the very edge of the 46th parallel. This year there was trouble for the Casaliva olive. There was almost no production available. Nothing to hold back Maripa, she has created her own EVOO through carefully chosen olives from another region. More here.
Maria Paola knows olive oil. She is the organizer and panel leader of the prestigious Leone d’Oro dei Mastri Oleari, a rigorous, international olive oil competition in Lake Garda, and her own extra virgin olive oil production lives up to her high standards.
